Marvellous meat loaf
Total cooking time: 50 min | serves 4
A simple, versatile dish that can be served hot with fresh veggies or cold with a salad.
carrot 1, peeled and grated,
onion 1, peeled and finely chopped,
baked beans 225g can, roughly mashed,
porridge oats 40g
pickle 3 tbsp,
cold water 4 tbsp
parsley 2 tbsp fresh, chopped or 2 tbsp frozen
Preheat the oven to 180ºC/fan 160ºC/gas 4. Line a 900g loaf tin (or thereabouts) with non-stick baking parchment. In a large mixing bowl, combine the mince, carrot, onion, baked beans, egg, oats, pickle, water and parsley. Make sure everything is thoroughly mixed together then spoon the mixture into the tin, pressing it down with the back of a spoon. Bake for 50 minutes then allow to cool in the tin for 10 minutes before turning out. Serve cut in thick slices. Variation: swap the pickle for sweet chilli sauce and the parsley for coriander.
